When using the Polysynth, the option to assign aftertouch ("pressure) or "timbre" and other parameters is right there:

But on a device like the Flanger that's not visible:

Is there a way to control the Flanger with aftertouch? How?

You could use the Note MOD device to some avail. If you add it right before the Flanger then you can choose some of its modulating sources and select the knobs of the flanger you want to modulate. It should work even with third party plugins. Like you can modulate with the timbre or pressure the pitch bend of Serum patches so to obtain some sort of micro pitch editing like you can in Bitwig native devices, just in another way.

AWESOME, this is a great solution. Now my only problem is that my midi controller (Arturia Keylan 49) is not sending pressure messages, but aftertouch, and I don't see that Bitwig uses aftertouch as an option (thou certain third-party plugins are receiving it).

You should see if you have an "assign" key on your midi keyboard controller, and first of all of course if that is supported in the script you are using.
