I've got a similar error under Linux. I've installed the public beta 2.1.2 and now it's up and running again.

To be completely honest. I had just purchased a new desktop and when I tried to install it and had this error, I never figured it out with Bitwig support.... I ended up returning that PC because of it, bought a different one that was a slightly different build and it installed fine on that machine.

Please try the current Bitwig Studio 2.1.2 version if you get the Java error in version 2.1.1!
