Coming from a tracker background, a vertical representation of the piano roll would be great for some kind of workflows (along with layered clips).

Use Renoise stand-alone, or its plug-in VST equivalent Redux ;) :P There is layered clip editing mode in Bitwig, if you're alluding that it is missing.

And did you asked them to put patterns and arranger horizontally 'like in any normal DAW'? How has that worked out? ;) :D

I'm all for consistency and if Bitwig changed the piano roll to vertical, they'd have to do the same to Arranger (and Clip Launcher in that view). Frankly, I don't see any advantage in piano roll being vertical. What I miss from the trackers is a simple thing: a cursor in piano roll that I can move about and use to insert, edit and delete notes with keyboard, like I would in Renoise. This is what makes that workflow fast, not whether it's vertical or horizontal, IMO :)
