Is it somehow possible (like in Logic) to start the bounce from 0.0.0.0 or whatever before bar 1.1.1.1 . Yes, I know I can move all the stuff in the arranger to the second bar, but thats not really a smart thing. If not, why is this not implemented? :)

Because of how the subdivisions work, 0.0.0.00 does not exist. However, if you are asking how to add a bar in front of the bounced output, then you can indeed set the start point of the project's audio export to 0.1.1.00 (which is 1 bar before 1.1.1.00)

What could I possibly miss, cause its not working here??? I'm on OS X ... latest Bitwig version... strange!
