My question: A friend and I work at his studio and create a MIDI file (in GM) I then bring it back to my studio (I've been using Acid Pro7) I open the file and change the instruments from GM to Native Instrument or Wave etc. by inserting a softsynth. Then render the instrument (s) as a wave file. Can I do this same operation with Bitwig?

Not sure, the basic way is import Midi from the Browser, MIDI is just Note Infomation and can save and import from everywhere. Then add a Instrument or vice versa, add Instrument and then import MIDI, recording the audio/ export as Audio. You find Audio in Browser Tab "Files" under Current Project/exported" under a crypted Folder, in actual Dateformat (yyyy/mm/dd).
